Mushroom salad á la Mikkola
200 g shiitake mushrooms
1 onion
100g cottage cheese
200g crème fraîche
salt
pinch of black pepper
1 tsp thyme
Chopped mushrooms are blanched lightly and frozen. Chopped onion and cottage cheese are mixed with the chopped mushrooms. Seasoned crème fraîche is added. Salad is put in cold for it to get properly seasoned.
Shiitake temptation
1/2 l peeled potatoes
1/2 l shiitake mushrooms
2 big onions
salt
garlicsalt
2 dl food cream or water and cream
Grate potatoes into coarse chips. Slice up the onions and the mushrooms. Put the ingredients in layers into a casserole. Season and pour the cream on the top. Stew about 45 minutes at 180 C degrees. Check the level of fluids and stew on until the temptation is done. This is ideal late-evening delicacy to be eaten with a toast and aromatic butter.
Pastasauce of shiitake mushrooms
4 portions
200 g (1/2 l) Shiitake mushrooms
1 onion
2 tbs butter
2 dl Food cream
150 g Blue cheese
2 tbs minced parsley
White or black pepper out of the peppermill
Slice up cleared mushrooms and mince the onion. Fry them in butter until the mushrooms have dried out. Add food cream. Heat up and add blue cheese. Stir until the cheese has melted. Season using black pepper and add parsley on top. Serve with pasta.
Tip: Sauce is at its best with fresh pasta! |
